Low Carb Stuffed Peppers

We love these yummy, filling stuffed peppers! This recipe makes a total of 8 stuffed peppers. One stuffed pepper has approximately 12.50g of carbs, 209.8g of fat, and 101.91g of protein. They aren't extremely low on carbs but they still have a relatively low amount. A vast majority of people who follow the keto way of eating, like myself, try to stay under 20-30g of carbs per day unless they are doing maintenance with more moderate macros. Depending on your allotted carbs per day, one or two servings of these is relatively decent, especially if you're like me and can only manage to eat two main meals and a couple of small snacks per day.

 8 green bell peppers
 1 ½ lbs ground beef
 ½ cup mozzarella cheese
 6 spinach leaves
 1 cup marinara sauce
 2 tbsp green onions
 2 tbsp butter
 ¼ cup chopped onions

Preheat oven to 350 degrees.

Cut away the stem, top, and membranes of each pepper, and rinse out the seeds gently with cold water.

Place your peppers in an 11x19 pan and let them air dry while you prepare the ground beef. I prefer nonstick pans, but if you don't have one you can always lightly brush the bottom and sides of your pan with vegetable or olive oil so that the peppers or sauce don't stick to it.

Brown ground beef. I used 1 1/2lbs but with 8 peppers you can afford to use 2lbs if you want. Once done, add in butter and chopped onions. This is also the perfect time to add any salt and pepper if you'd like to add some.

The marinara sauce is an optional step. I ended up adding some to add some taste for my husband and kiddo but I omitted it with my servings. If you'd like to add it, remove your peppers from the pan, placing them on a layer of paper towels or your cutting board. Spread your sauce on the bottom of your 11x19 pan. I sprinkled some Italian seasoning to taste, too.

Replace your peppers in your 11x19 pan.

Start stuffing! I put a small sprinkle of mozzarella cheese in the bottom of each one before adding the ground beef. Add a couple of tablespoons of ground beef, topping it with another sprinkle of cheese and a spinach leaf (optional).

Finish stuffing your peppers as full as you'd like.

Top your peppers with mozzarella cheese and green onions (optional). If you'd like to add more marinara sauce (watch your carbs), you can add more between your peppers and even top them with sauce.

Cook peppers in preheated oven at 350 degrees for approximately 45 minutes or until cheese is golden brown.
